Each stop has an activity. You can see all possible activities mentioned in Activities.
Navigate to Configuration > Order input.
Click on Activities in the left sidebar.
For each activity, you can configure how long it would take. Once completed, that duration will automatically be calculated when you have that activity mentioned in your trip.
On an individual order, you can see in the Execution section on the route details, a separate column "Activity" that mentions the activity for each stop.
